This is a popular, small 35-bedroom hotel includes a 1AA Rosette Restaurant set in the grounds as an upmarket Country Inn is popular with the locals and visitors to the New Forest Area,
This is a fast-paced place offering dining all year round as well as numerous Weddings for up to 200 guest, also smaller functions and banquets, and offering leisure facilities.
Role and Responsibilities
Cooking and prep of food, making sure it adheres to a 1AA Rosette standard
Ordering, stock rotation, labelling and identifying issues to be rectified
Responsible for the onsite Pub dining when there are events in the Hotel
Looking after costs and budgets
Assisting with management
Health and Safety – HACCP – Hygiene reports
Staff Rotas
Covering Head Chefs absence
Candidate Requirements
The Sous Chef or Senior Sous Chef we are looking for will need to be someone with a strong background at a similar standard. Passionate, creative, honest, and encouraging of others.
The role will be to function as the Sous Chef or Senior Sous Chef of the restaurant and adjoining Gastro style pub, making sure that you contribute to the overall success of the hotel, restaurants and banqueting, in accordance with the hotel’s standards and financial goals. To plan, organise, direct and control all activities in the pastry department in order to achieve maximum guest satisfaction
