Shift Details: 10 hour shift, 12 hour shift, 8 hour shift, Day shift, Monday to Friday,

Job description- Plan and source drinks lists to compliment menus and maximise sales and profitability
- Review drinks lists seasonally in conjunction menu changes.
- Directly work in any area of the bar or restaurant when circumstances dictate
- Understand guest profile and adapt wine and drinks list to suit
- Manage selection and delivery of wine flights as appropriate.
- Create pairing options for regular and ad hoc menus
- Assist guests during the dinner service with wine recommendations and selection for perfect pairing with their dinner.
- Decanting of the wine as appropriate.
- Develop a training program for all Team Members to improve their knowledge of wine tasting, cocktail making and service.
- Train Team Members throughout the hotel in order to maximize their understanding of wine and proper service techniques including glassware, pour levels, storage, beverage pairings and the ability to understand guest preferences.
- Ensure that all wine is served in proper glassware and in proper condition.
- Maintain all beverage lists to be accurate, up to date and free of errors.
- Manage wine cellar and ensure it is fully stocked.
- Respond appropriately to customer complaints.
- Use Hotel approved chemicals and substances correctly and safely following certain procedures and by using correct dilution ratios.
- Only use chemicals for which you have received relevant COSHH training
- To advise guests with allergies of which dishes on the menu are and are not suitable for them
- Take orders from patrons for food or beverages, and using EPOS systems enter these accurately onto till.
- Be fully conversant with EPOS and make changes as required
- Collect and process payments from customers.
- Check patrons' identification to ensure that they meet minimum age requirements for consumption of alcoholic beverages.
- To be aware of guest allergies
- To be involved in month end stock takes and production of results
