- A Green Michelin Star, 2AA Rosette restaurant in the heart of Kent, offers farm-to-fork dining with a hyper-seasonal set menu. Serving a set menu celebrating the best ingredients available in our region, delivering a unique connection between the land and our table.
What we expect:

- Responsible for the day to day operations of the restaurant.
- Providing link between team and Owners
- Making sure all checklists and SOP’s are being followed by the team.
- Setting up the daily briefing sheets, liaising with the Head Chef to edit menus. Editing wine lists, drinks menus.
- Running services to a high standard. Showing a good understanding of pace and priorities in direction and delegation of team members, knowing the most important thing in the building is the people in the seats.
- Cashing up and sending Daily Cash up to Owners at the end of the day.
- Ensuring that the cash up sheet is correct with no errors, before sending.
- Changing Products and prices on the till.
- Implementing stock rotation on products to avoid out of date stock loss
- Training and developing new and existing staff members.
- Evidence that staff training for both standard of service and upselling has been carried out.
- Helping with general restaurant tasks, this includes but is not limited to working a section, offering advice on food and wine, taking payments, answering the phone, hosting, making coffees, restocking fridges, counting laundry, cleaning, moving chairs and tables, responding to emails, polishing glasses, polishing cutlery, polishing crockery, and general pre-service prep, all to company standards.
