Responsibilities

  • As Senior Sous Chef, you will assist the Executive Chef to retain the 5-star standards and the 3AA Rosettes in the fine dining restaurant.
  • Also working towards achieving a Michelin Star and 4AA Rosettes.
  • You will oversee the kitchen to ensure freshness of ingredients, level of staffing and mis en place.
  • Assisting with menu writing and dish creating, also overseeing and assisting the afternoon tea department at the venue.
  • You will assist the Executive Chef with in-house PR and Sauce Communication i.e. recipes, press trips etc.
  • Ensure that the section is set for service, assisting in training all Chefs and Kitchen Porters.
  • Ensure the kitchen is organised with the correct daily function sheets, mis en place, job lists and that jobs are prioritised in the correct order.
  • Assist in maintaining a professional level in each kitchen adhering to the Standard Operating Procedures and Policies.
  • Assist and preparing the day to day ordering for the kitchen.
  • Ensure that the kitchen areas are clean and meet safety standards. Assist with HACCP and Health and Safety procedures.
  • Ensure that all kitchen equipment is fully functional, stored correctly and staff are looking after the equipment.
  • Be a hands on presence during service as and when required.


Requirements

  • The ideal Sous Chef will have a strong background and similar experience working at these high standards.
  • 3AA Rosette experience is required and if you have Michelin Star experience this would be ideal, putting you in a great position for securing this exciting role!
  • If you do not have Michelin Star experience this is not a deal breaker as a solid 3AA Rosette background with good job longevity will suffice.
  • You will be highly motivated and passionate about your work with the desire to become part of a fantastic and talented team that not only provides an amazing dining experience, but so much more also!
